A review of the literature dealing with the possibility of using sugars, in particular sucrose, as dosimetric material is presented. All methods involved were divided according to analytical techniques used in dosimetric signal measurements (polarimetry, spectrophotometry and electron paramagnetic resonance – EPR). Double-signal sugar dosimeters (EPR + spectrophoto-metry) are also described.
